This week we’re highlighting Clay Perry, who has been invaluable in our volunteer efforts! Ed thanked him by dropping off chocolate peanut butter bars to Clay in Ward 5. Fun fact: Clay and Ed’s son David were camp buddies a long time ago. Now Clay is active in progressive politics, including working for Bernie Sanders’s this campaign. Clay has been an all-around great help to our campaign, always with a smile (behind a mask)!
Ed’s Chocolate Peanut Butter Bars
Grease 9 X 13 pan, Turn Oven on to 350
For Cookie Layer:
- Beat 1 stick butter or margarine with 1 cup sugar
- Add 1 egg and 2 tsp vanilla
- Add (mixed together) 2 cups flour, ½ tsp salt, ½ tsp baking powder
Spread into the pan. It will need to be pretty thin – ½ inch or less. I flour my hands, grab small handfuls, flatten them like pancakes, and place them in pieces in the pan. Then I smooth it out when it is all in the pan.
Bake cookie layer 10 minutes
For Peanut Butter Layer:
- Mix 14 oz can condensed sweetened milk
- I cup peanut butter
- 3 egg yolks (separate whites from yolks)
Take the cookie layer out of the oven, and spread peanut butter mix over it. Again, drop small amounts around the pan and then smooth it. Bake 20-25 minutes
Take out of the oven and spread 2 cups of chocolate chips on top. You can turn the oven off and put the pan back in for 2 minutes or so. Then take it out and smooth the chocolate with a knife
Let it cool completely and then cut into bars.
