This week we thanked our amazing Ward 7 lead volunteers, Ambrose Lane, Jr and Dave Retland. They are recruiting volunteers, hosting events in Ward 7, developing a Ward 7 Pledge, and working to distribute signs. Ed made oatmeal chocolate chip cookies for Ambrose and Dave to show his appreciation! Here’s the recipe.
Ed’s Oatmeal Chocolate Chip Cookies
Turn oven on to 375. Grease two cookie sheets (or line with parchment)
In large bowl, mix:
- 2 ½ cups oats. Blend the oats in blender or food processor after measuring
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
In another large bowl/mixer, blend:
- 2 sticks butter
- 1 cup granulated sugar
- 1 cup light brown sugar
Add 2 eggs and 1 tsp vanilla extract
Slowly mix dry ingredients into wet mixture
Mix in 12 oz chocolate chips (and 1 ½ cups chopped nuts if you like)
Roll batter into 1-inch balls and place 1 dozen on a cookie sheet. Bake 9-10 minutes. Cookies will be light brown when they are ready (not pale).
